Whatcha got Cookin?

We're running on an upside down schedule around here (the odd schedule and lack of sleep feels like we have a newborn). Scott & Sten are servicing toilets every night at the Trials from 9:30pm - 2am. When they return (to the motorhome on site), they are starving - so we have been having "dinner" at 2am. The new recipe I tried last night (er, this morning) is simple and delicious - I had to share. It's called "man pleasing chicken" - and it certainly lived up to it's name - YUM!

1 1/2 lbs of chicken (calls for thighs but (blech) I can't stand thighs)
1/2 cup dijon mustard
1/4 cup maple syrup
1 T rice wine vinegar

I chose to cook in a skillet - but the oven instructions are to bake at 450 for 40 minutes. The sauce gets carmelized and crispy - will definitely make again.

Tasty Morsels

My family does not share my fondness for pinterest. They claim since I've discovered the site, the food at this joint has become "pinteresting", which is not a complimentary term. They whine - what's wrong with our normal food - whaaaa -

I was summoned to bring snacks to an event this evening, and I turned to Pinterest for a unique idea - something that didn't take forever. BINGO! Partially hollowed out baguettes, stuffed with dip and veggies. Obviously, you cut one side of the baguette straight - but the other end - is cut at a severe angle to showcase the design.

I did a cheer - "It looks like the picture - it looks like the picture!!" My food never looks like the picture. Maybe that's what makes it so pinteresting.

Give this a try . . .

Don't shudder or cringe - this is an unlikely cast of characters, but the results are delicious. Not sure what to call it - but my Aunt Bonnie introduced us to this one (think I'll call it Hush Hush Chicken).

Throw some boneless/skinless chicken in a 9x13 baking dish.
Combine 2 cans of cranberries (with whole berries), 2 packages of onion soup mix, and a bottle of french dressing.
Pour over the chicken
Bake UNCOVERED at 375 until chicken is done
Serve over noodles or rice

HIDE the ingredients so your family has no clue what they are eating.

Ok, here's a pic of the room, complete with fabric and signs hung on the metal. I can't seem to get a real crisp picture, but you get the idea.
